Ingredients
  

  • 4 bone-in skin-on chicken thighs
  • 1 cup apple cider
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 2 cloves garlic minced
  • Salt and black pepper to taste
  • Cooking oil
  • 1 tablespoon of olive oil
  • 3 medium-sized sweet potatoes

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat some cooking oil over medium-high heat. Sear the chicken thighs, skin-side down, until they turn golden brown.


  • Toss cubed sweet potatoes in a bowl with 1 tablespoon of olive oil. Set this mixture aside.


  • In a separate bowl, mix the apple cider, Dijon mustard, honey, minced garlic, salt, and black pepper.
  • In a baking tray, pour the cider glaze over the seared chicken thighs. Add sweet potato cubes to the baking tray. Then, transfer the tray to the preheated oven and bake for about 20-25 minutes, or until the chicken and sweet potato is cooked through, and the glaze has caramelized.
  • Remove from the oven and serve your Cider Glazed Chicken Thighs hot. Garnish with fresh herbs and fresh pomegranate sprinkled on top if desired.
