Ingredients
  

  • 1 lb 450g starchy potatoes (russet or Idaho) (peeled, cut into bite-sized pieces)
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh herbs thyme or rosemary for garnish (optional)

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a large mixing bowl, combine the potato pieces, minced garlic, olive oil, salt, and black pepper. Toss until the potatoes are thoroughly coated.


  • Spread the coated potato pieces on the prepared baking sheet in a single layer, ensuring they have ample space between them.


  • Roast in the preheated oven for 25-30 minutes, turning the potatoes once or twice, until they exhibit a crispy exterior and a tender interior.
  • Once done, remove the Garlic Roasted Potatoes from the oven, and if desired, garnish with fresh herbs like thyme or rosemary to enhance the flavor. Serve immediately.
