Ingredients
  

  • 1 lb 450g starchy potatoes (russet or Idaho) (peeled, cut into bite-sized pieces)
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh herbs thyme or rosemary for garnish (optional)

Method
 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine the potato pieces, minced garlic, olive oil, salt, and black pepper. Toss until the potatoes are thoroughly coated.


  3. Spread the coated potato pieces on the prepared baking sheet in a single layer, ensuring they have ample space between them.


  4. Roast in the preheated oven for 25-30 minutes, turning the potatoes once or twice, until they exhibit a crispy exterior and a tender interior.
  5. Once done, remove the Garlic Roasted Potatoes from the oven, and if desired, garnish with fresh herbs like thyme or rosemary to enhance the flavor. Serve immediately.
